Chandra's AWESOME Chocolate Chip Cookies

You will be baking these often to keep up with demand!

2 cups margarine                    4 cups freshly milled wheat
1 1/2 cups sugar                    1 1/2 tsp salt
3/4 cup brown sugar                 2 tsp baking soda
4 eggs                              1 package chocolate chips,
4 tsp vanilla                                     regular or mini



Beat margarine until creamy. Add sugars, eggs and vanilla and beat until
light.  Add flour, salt, and soda and mix well.  Stir in chocolate
chips.   Drop heaping teaspoons of dough onto ungreased cookie sheets.
Bake at 375 degrees for 8 - 10 minutes.

Note:  If using white flour, increase sugar to 2 cups, brown sugar to 1
cup, and salt to 2 tsp., or cookies will be bland-tasting.







Whole Wheat Bread

Four loaves of great-tasting homemade bread ready in about 2 hours! 

5 cups warm water
1/8 cup canola oil
1/8 cup unpasturized honey
2 heaping tbsp dough enhancer
2 heaping tbsp quick-action yeast
1 heaping tbsp salt


Pour water into Kitchen Champ bowl.  Add oil, honey, enhancer, and
yeast.  Add 5 cups freshly milled whole wheat flour.  Add salt.  Set
machine to "Bread" setting, and start.  Add more flour (about 6 - 7
cups) in small amounts, until dough stops sticking to sides of bowl. Do
not add too much flour, as the dough will become too stiff, and you
could damage the machine.  Hit "start" again to begin automatic
kneading.

Divide dough into four pieces and shape into loaves.  Place in
well-greased loaf pans, and cover with a dish towel and plastic.  Set in
warm place, away from drafts, and let rise for 30 minutes.  Bake in
preheated 375 degree oven for 30 minutes.
Remove loaves from pan and place on racks to cool.


As a variation,  blend one cup of grains and/or seeds in the Kitchen
Champ blender for about 40 seconds.  Cover with hot water and soak for
about half an hour.  Add with water before first mixing.  Suggestions:
barley, rye, wheat, sunflower seeds, sesame seeds, flax, oats.










Lentil and Vegetable Casserole

Very good, "homey" one-dish meal, good enough for company.  Just add a
fresh salad and some homemade whole wheat bread for a great meal.

2 cups dried lentils
2 garlic cloves, minced
2 cups chopped onion 
1 bay leaf
2 cups (or  two 14 oz cans) stewed tomatoes
1 1/2 tsp salt
2 cups (or 2 individual serving cans) tomato juice
1/2 tsp thyme
1 1/2 cups chopped carrots
1/2 tsp marjoram
1 cup chopped green pepper
1/4 tsp sage
1/2 cup chopped celery


Combine ingredients in large casserole dish.  Cover and bake at 375
degrees for about 40 minutes, until carrots are tender.   Sprinkle with
1 cup shredded cheddar cheese, and bake 5 minutes more.
